


We just had a fabulous day of fellowship, language practice and cooking lessons with Carmen, Gumero and Lupe and their children. Enchiladas in Mexico aren’t anything like the ones in Oregon! I learned how to make the red enchilada sauce. Instead of pouring it over a rolled-up tortilla stuffed with meat, you dip your tortilla in the red sauce before frying them in lard. Then, you line your plate with fried-tortillas, top them first with cheese, then shredded cabbage, a uniquely-made salsa, topped off with pickled vegetables. They have a very interesting flavor. Notice that I am using gloves while handling peppers.
It’s official. We are friends for life. Mike and I were told that both their families will be traveling to Oregon! I hope it will be possible. ~T
